Only 144p: Playback problems in YouTube for iOS
There are apparently problems with the YouTube app on iPhones and iPads at the moment. Google has confirmed that videos are only being played in low quality.

There are currently problems with the playback quality of videos in the YouTube app for iPhone and iPad. Google confirmed the problem in its forum after various users reported it. A solution is currently being worked on. Both videos and shorts are affected.
Despite a good internet connection, videos are only played at 144p or 360p as a result of the fault, according to a post in the help forum. When switching to a higher quality, waiting times may occur. In addition to iOS and iPadOS devices, the issue has apparently also been observed on desktop computers and smart TVs. However, the number of reports for the latter two types of device is significantly lower.

So far, there have been well over 2000 user comments in the community forum reporting the problem. The disruption has also been reported on Reddit and other platforms.
